Want to use my QC 35 wireless headphones to game on Nintendo Switch.  Looking for any recommendations on a quality wired Mic I can run with it into the Switch.

I would suggest looking into the QuietComfort 25 headphone connection, this will be compatible with your QuietComfort 35 headphones and will allow microphone functionality.
