Has anyone experienced their soundbar randomly playing music at different times during the day? It was 3am and it started playing heavy metal music on mine. Have only started experiencing this recently.

When your speaker has started playing unexpectedly, if you were to open the Bose Music app, what source does the soundbar say it is playing from?
Finding out where this music is being played from will point us in the right direction to work out how it is starting.

If it is playing from Spotify it is possible to start the speaker playing from either the Bose Music app, Spotify Connect or the remote (if you have set a preset for it). Given what you have said so far, the most likely options are going to be the Bose Music app or Spotify Connect.
Do you share your Spotify or Bose Music accounts with anyone else? It could be someone is controlling the soundbar from the apps without you knowing about it, or accidentally choosing your speaker in Spotify Connect.
Also, is your Soundbar connected to a shared Wi-Fi network?
The first thing I would recommend we do to test this is to remove the Spotify account from the Bose Music app. This will narrow down the options for what is starting the speaker playing, and you can re-add the account after testing it for a while without.
To remove the Spotify account you would want to go to the account settings on the Bose Music app, by going to the 'My Bose' page and selecting the icon of a person in the top right-hand corner. From there select manage music services > Spotify > remove.

I have the same issue, y'day night soundbar started playing some music in the middle of the night. I checked bose music app to find that spotify is playing it. I shut my phone down thinking the app may be having a bug but the same thing happened again at 3:30 AM. I had to disconnect power cable to soundbar 700 to avoid this.
Today morning I was checking Bose Music app under Manage Music Services section and I see that I haven't even logged into spotify account. This is spooky and invasion of privacy. I had an older version of Bose Music, I have now updated to 3.2.2 lets see what happens.

Yesterday afternoon at around 4pm our Soundtouch 700 suddenly blurted out random heavy R & B type music (not our liking) at top level/highest volume in the living room. No-one was in the living room, and it was previously silent in there. It is not connected to SPOTIFY although we do have SPOTIFY at home. I rushed in and couldn't turn the music off via the remote control and had to turn it off at the plug. It was deafening. Weird & worrying.
I am sorry this happened. I can understand this is frustrating. Can I please confirm the answers to @Keith_L's questions above?

Hello - I had the same thing last night. Twice music suddenly started playing from Spotify. Not a track from one of my playlists or i’d recently listened to but a single song I didn’t recognise. No one else could have been logged in as far as I am aware. Have you found a solution?

Could you please confirm if you have the SoundTouch 300 soundbar or the Soundbar 700?
